  • 4 pieces boneless chicken thighs or breasts
  • 1 cup whole cranberry sauce (240 ml)
  • 1/2 cup orange juice (120 ml)
  • 2 tablespoons honey (30 ml)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1/2 teaspoon black pepper (2.5 g)
  • 1/2 teaspoon salt (2.5 g)

Instructions

Preparation

  • Place the boneless chicken thighs or breasts at the bottom of your crockpot.
  • In a bowl, whisk together the whole cranberry sauce, orange juice, honey, soy sauce, Dijon mustard, garlic powder, black pepper, and salt until the mixture is smooth and well combined.
  • Pour the delicious glaze mixture evenly over the chicken, ensuring each piece is well coated.

Cooking

  • Cover the crockpot. Cook on LOW for 5 to 6 hours or HIGH for 2 and 1/2 to 3 hours, until the chicken is tender and fully cooked.
  • For a caramelized finish, carefully transfer the chicken to a baking sheet. Spoon some of the sauce over the top and broil for 2 to 3 minutes, until the glaze is bubbling and slightly charred.

Garnishing

  • Top your dish with fresh thyme and a few extra cranberries before serving to make it look inviting.

Notes

If you prefer a thicker sauce, let the glaze simmer in the crockpot uncovered for the last 30 minutes of cooking. For a zesty kick, toss in some chopped jalapeƱos or a dash of chili flakes to the sauce mixture. You can also try this glaze with pork or turkey, adjusting cooking times accordingly.
