  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 240 ml heavy cream
  • 50 g grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh chopped parsley for garnish (optional)

Instructions

Preparation

  • Slice the chicken breasts in half horizontally or pound them to an even thickness. Season both sides with salt, pepper, and Italian seasoning.

Cooking

  • Heat the olive oil in a skillet over medium heat. Once hot, add the chicken to the skillet and sear until golden brown and cooked through, about 4–5 minutes per side.
  • After cooking, remove the chicken and set aside.
  • Reduce the heat to low, and add the butter to the same skillet. Once melted, add the minced garlic and sauté for about 1 minute or until fragrant.
  • Pour in the heavy cream and stir to deglaze the pan, making sure to scrape up any flavorful bits stuck to the bottom. Add the grated Parmesan cheese and let it simmer until the sauce has thickened, roughly 3–4 minutes.
  • Return the chicken to the skillet and simmer for an additional 2–3 minutes, allowing it to warm through and coat with the creamy sauce.

Serving

  • Place the chicken on a plate and generously spoon the creamy sauce over the top. Garnish with fresh chopped parsley.

Notes

Consider adding spinach, mushrooms, or sun-dried tomatoes to the sauce for extra flavor. Customize the Italian seasoning to taste. For a lighter version, substitute half of the heavy cream with chicken broth while still using Parmesan. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for longer storage.
