Ingredients

For the filling

  • 4 ounces cream cheese, softened This adds creaminess to the filling. Consider using Greek yogurt for a lighter option.
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 3 cups shredded cooked chicken You can use rotisserie chicken for convenience.
  • 1/4 cup finely chopped celery
  • 2 green onions sliced
  • 2/3 cup dried cranberries (Craisins) These add sweetness; feel free to substitute with raisins.
  • 1/2 cup chopped toasted pecans Walnuts or almonds can also be used.
  • 1/3 cup crumbled feta cheese
  • Salt and pepper, to taste

For assembly

  • 4 large flour tortillas You can use whole wheat tortillas for a healthier option.

Instructions

Preparation

  • In a large mixing bowl, combine the softened cream cheese, mayonnaise, and Dijon mustard until smooth and creamy.
  • Add the shredded chicken, chopped celery, sliced green onions, dried cranberries, toasted pecans, and crumbled feta cheese to the bowl. Stir until all ingredients are well incorporated. Season with salt and pepper to taste.
  • Place the flour tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave on HIGH for about 20 seconds to soften the tortillas.
  • Spread approximately 1/4 of the chicken mixture evenly over each tortilla.
  • Roll each tortilla tightly into a log shape and wrap it in plastic wrap. Refrigerate for at least 1 hour to allow flavors to meld.
  • Once chilled, slice each roll into 1-inch pieces and serve.

Notes

The roll-ups can be served as-is or with dipping sauces like ranch dressing, salsa, or guacamole. Store leftovers in an airtight container in the refrigerator for up to 3 days.
