Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1/2 cup milk room temperature
  • 2 large eggs room temperature
  • 1/4 cup melted butter

  • 1 cup fresh cranberries, halved
  • 1 cup chopped walnuts

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, mix the milk, eggs, and melted butter until fully blended. Pour this mixture into the dry ingredients and stir gently to combine.
  • Carefully fold in the halved cranberries and chopped walnuts until they are evenly mixed throughout the batter.
  • Pour the batter into the prepared loaf pan and smooth out the top with a spatula.

Baking

  • Bake in your preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it cool in the pan for a bit, then transfer to a wire rack to cool completely before slicing.

Notes

For a refreshing twist, consider adding a teaspoon of orange or lemon zest to the batter. If you’re not a fan of walnuts, feel free to swap in pecans or even chocolate chips. Store the bread wrapped tightly in plastic wrap or aluminum foil to keep it fresh; it can also be frozen for up to three months.
