Ingredients

Pancake Batter

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1.5 teaspoons baking soda
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 3/4 cup fresh or frozen cranberries
  • 2 large eggs
  • 1.5 cups whole milk
  • 1 cup full-fat ricotta cheese
  • 1.5 teaspoons pure vanilla extract
  • 1/4 cup orange juice
  • 2 teaspoons orange zest

Cranberry Maple Syrup

  • 2 cups fresh or frozen cranberries for syrup
  • 1/4 cup orange juice for syrup
  • 2 tablespoons granulated sugar for syrup
  • 3/4 cup maple syrup
  • 1.5 tablespoons unsalted butter

Instructions

Preparation

  • In a large bowl, whisk together the flour, granulated sugar, baking soda, baking powder, salt, and cinnamon.
  • Gently fold in the chopped cranberries.
  • In another bowl, beat the eggs, then add the milk, ricotta cheese, and vanilla extract.
  • Mix until everything is well combined.
  • Pour the wet ingredients into the dry mixture and gently fold until just combined. Be careful not to over-mix! Add in the orange juice and zest, and fold again until everything is evenly mixed.

Cooking

  • Heat a greased skillet or griddle over medium heat.
  • For each pancake, pour about 1/3 cup of the batter onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat until all batter is used.

Making the Syrup

  • In a saucepan, combine the cranberries, orange juice, and sugar. Bring to a boil, then reduce heat and simmer until the cranberries soften.
  • Stir in the maple syrup and butter until combined.

Serving

  • Stack your warm pancakes on a plate and drizzle with the cranberry maple syrup. Enjoy!

Notes

Don't overmix the batter. You can add nuts like walnuts or pecans for an extra crunch or substitute the ricotta with cottage cheese for a different texture. Batter can be prepared the night before and refrigerated.
