Instructions
Preparation
Preheat your oven to 400°F (200°C) and line a regular-sized 12 muffin pan with paper liners.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a larger bowl, mix together the sugar and orange zest until fragrant.
Add the milk, vegetable oil, orange juice, eggs, and vanilla extract to the sugar mixture and stir until well combined.
Gently fold the dry mixture into the wet mixture until just combined, being careful not to overmix.
Fold in the cranberries until evenly distributed.
Baking
Divide batter into the 12 muffin cups.
Bake for 20-25 minutes or until a toothpick comes out clean.
Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Serve warm with butter or honey. These muffins can also be part of a brunch spread.
