Ingredients

For the Cookies

  • 3/4 cup unsalted butter, softened
  • 1 cup sugar, plus extra for rolling
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries, finely chopped
  • 1 tablespoon orange zest

For the Orange Sugar

  • 1/2 cup sugar for orange sugar
  • 1 tablespoon orange zest for orange sugar

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and 1 cup of sugar until light and fluffy, about 3-5 minutes.
  • Add the egg and mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Fold in the finely chopped cranberries and 1 tablespoon of orange zest until evenly distributed.
  • Cover the dough and refrigerate for about 30 minutes.

Making the Orange Sugar

  • In a small bowl, combine 1/2 cup of sugar with 1 tablespoon of orange zest, rubbing them together until fragrant.

Baking

  • Shape the dough into 1-inch balls and roll each in the orange sugar mixture until coated.
  • Place the cookie balls on a lined baking sheet and flatten slightly.
  • Bake for 10 to 13 minutes, or until lightly golden around the edges.
  • Cool on wire racks for a few minutes before enjoying.

Notes

Store the cookies in an airtight container at room temperature for up to a week. For a gluten-free option, use a 1:1 gluten-free flour blend.
