Ingredients

Cookie Base

  • 3/4 cup butter, softened Use unsalted butter for best flavor.
  • 1/2 cup white sugar
  • 1 cup packed brown sugar
  • 1 large egg At room temperature.
  • 1 teaspoon vanilla extract
  • 1 tablespoon grated orange zest
  • 2 tablespoons orange juice
  • 2 1/2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans (optional) Can be omitted for nut-free option.

Glaze

  • 1 teaspoon grated orange zest For glaze.
  • 3 tablespoons orange juice For glaze.
  • 1 1/2 cups confectioners' sugar

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, white sugar, and brown sugar using an electric mixer until it's smooth and fluffy.
  • Add the egg and vanilla extract to the mixture and beat until everything is well blended.
  • Stir in the grated orange zest and orange juice until combined.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this dry mixture into the creamed ingredients, stirring until just combined.
  • Fold in the dried cranberries and chopped pecans (if using).
  • Drop rounded tablespoonfuls of dough onto ungreased cookie sheets, leaving space between each cookie.

Baking

  • Bake for 8-10 minutes or until the edges begin to turn golden brown.
  • Once done, remove them from the oven and let them cool on wire racks.

Glazing

  • In a small bowl, stir together the glaze ingredients: grated orange zest, orange juice, and confectioners' sugar until smooth.
  • Drizzle this glaze over the cooled cookies and let it set.

Notes

Storage: Keep your cookies in an airtight container to maintain freshness for up to a week. Freezing: Freeze the cookie dough in rounded balls, bake them directly from the freezer, adding a minute or two to the baking time. For extra flavor, add a pinch of cinnamon or nutmeg to the dough.
