Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (240g)
  • 1 cup sugar (200g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon salt (2.5g)

Wet Ingredients

  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest

Mix-ins

  • 1 cup dried cranberries (150g)
  • 1/2 cup chopped almonds (optional, 70g)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs together with the vanilla extract and orange zest until well combined.
  • Gradually pour the egg mixture into the dry ingredients, mixing until everything is just combined.
  • Carefully fold in the dried cranberries and chopped almonds if you’re using them.

Baking

  • Divide the dough in half. Shape each half into a log on the prepared baking sheet.
  • Bake the logs for about 25 minutes, or until they turn a lovely light golden brown.
  • Allow the logs to cool for about 10 minutes. Once cooled, slice each log into 1/2-inch pieces.
  • Arrange the slices cut side down on the baking sheet.
  • Return the baking sheet to the oven and bake for another 10-15 minutes until the biscotti are crispy.
  • Let your biscotti cool completely before serving.

Notes

Keep your biscotti in an airtight container at room temperature, and they’ll stay fresh for about two weeks. Feel free to swap dried cranberries for other dried fruits like cherries or apricots for a unique twist. For a nut-free version, simply skip the almonds.
