  • 2 cups fresh or frozen cranberries
  • 8 oz cream cheese
  • 2 cups all-purpose flour (or gluten-free flour)
  • 1 cup sugar
  • 1 tsp baking powder
  • 2 eggs (or egg substitute)
  • 1/2 cup butter (or oil for dairy-free)
  • 1 tsp vanilla extract 5 ml
  • 1 cup walnuts (optional) for added flavor
  • zest of 1 orange (optional) for added flavor

Instructions

Preparation

  • Preheat your oven to 350 degrees F (180 degrees C) and grease a loaf pan.
  • In a large bowl, whisk together the flour, sugar, and baking powder until combined.
  • In another bowl, beat the cream cheese until smooth. Add the eggs, melted butter (or oil), and vanilla extract, mixing until well combined.
  • Pour the cream cheese mixture into the bowl with the dry ingredients. Mix gently until just combined; don’t over-mix!
  • Gently fold in the cranberries and add walnuts or orange zest if using.

Baking

  • Pour the batter into your prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and enjoy your cranberry loaf! Consider drizzling with cream cheese frosting for a special treat.
