Ingredients

For the cranberry filling

  • 2 cups fresh or frozen cranberries
  • 1 cup sugar

For the crumble topping

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a saucepan over medium heat, combine the cranberries and sugar, cooking until cranberries start to burst and thicken, about 10 minutes. Set aside to cool.
  • In a large bowl, mix together the flour, rolled oats, brown sugar, melted butter, salt, and cinnamon until crumbly.

Layering

  • Press half of the crumble mixture into the bottom of the prepared baking dish.
  • Pour the cranberry mixture evenly over the base, then sprinkle the remaining crumble mixture on top.

Baking

  • Bake for 30-35 minutes, or until the topping is golden brown.
  • Allow the bars to cool completely in the pan before cutting.

Notes

Serve plain or with powdered sugar. Pair with ice cream or a hot drink. Store leftovers in an airtight container for up to 3 days or in the fridge for a week.
