Ingredients

For the Pinwheels

  • 1 sheet puff pastry, thawed
  • 120 grams cream cheese, softened
  • 75 grams dried or fresh cranberries, chopped
  • 60 grams feta cheese, crumbled
  • 2 tablespoons fresh herbs (such as parsley, thyme, or rosemary), chopped
  • 1 each egg, beaten (for egg wash)

Preparation

  • Unroll the thawed puff pastry on a lightly floured surface. If needed, roll it out slightly to make it even.
  • In a medium bowl, combine the softened cream cheese, crumbled feta, and chopped herbs. Mix until smooth.
  • Using a spatula or the back of a spoon, spread the cream cheese mixture evenly over the puff pastry. Be sure to leave a small border around the edges.
  • Sprinkle the chopped cranberries on top of the cream cheese mixture, spreading them evenly.
  • Starting from the long edge, roll the puff pastry tightly into a log.
  • Using a sharp knife, slice the log into 1.25-centimeter (about half an inch) pieces.
  • Place the slices on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a lovely golden finish.
  • Preheat your oven to 200°C (400°F) and bake the pinwheels for 15–20 minutes, or until they are golden brown and puffed.
  • Let the pinwheels cool slightly before serving. They are best enjoyed warm!

Notes

These pinwheels can be prepared a few hours in advance. Experiment with the filling by adding ingredients like chopped walnuts or a dash of garlic powder. Keep an eye on the pinwheels while baking; remove them once golden brown.
