  • 3 pieces eggs
  • 2 cups sugar (400g)
  • 3/4 cup butter, softened (170g)
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour (315g)
  • 12 oz fresh cranberries (340g)

Optional Glaze

  • 2 cups powdered sugar (240g) (optional)
  • 2 tablespoons fresh lemon juice (optional)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, use a mixer to beat the eggs and sugar together until the mixture is slightly thickened and light in color, about 5-7 minutes.
  • Add in the softened butter and vanilla extract, mixing for an additional two minutes until well combined.
  • Gradually stir in the all-purpose flour until just combined. Be careful not to overmix!
  • Fold in the fresh cranberries, making sure they are evenly distributed throughout the dough.
  • Using a 2-tablespoon scoop, portion out the cookie dough onto a parchment-lined baking sheet, giving them some space in between.

Baking

  • Bake in the preheated oven for about 18 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for at least 5 minutes before transferring them to a wire rack to cool completely.

Glazing (optional)

  • If you'd like to glaze your cookies, mix together the powdered sugar and lemon juice, then drizzle it over the cooled cookies.

Notes

Don’t Overmix: When adding the flour, mix just until combined. Sweeten the Tartness: If you prefer a sweeter cookie, you can always add an extra tablespoon of sugar to the dough before baking. Chill the Dough: If you have time, chill the dough for about 30 minutes before baking. This helps prevent the cookies from spreading too much.
