Ingredients

For the pastry twists

  • 1 sheet puff pastry (about 250g) – thawed and chilled
  • 120 g brie cheese – sliced thinly
  • 1/3 cup cranberry sauce – smooth or whole-berry
  • 1 tsp fresh thyme leaves
  • 1 egg – beaten (for egg wash)
  • 1 tbsp honey (optional, for drizzling)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, gently unroll the puff pastry. Use a rolling pin to smooth out any visible folds.
  • Evenly spread the cranberry sauce over the puff pastry, making sure to leave a small border around the edges.
  • Layer the thin slices of brie cheese on top of the cranberry sauce. Sprinkle the fresh thyme leaves over the brie.
  • Using a sharp knife or pizza cutter, cut the pastry into 8 strips.
  • Take each strip and fold it in half lengthwise to enclose the filling. Gently twist the strips and pinch the ends to seal them.

Baking

  • Place the twists on the prepared baking sheet. Brush the tops with the beaten egg.
  • Bake in the preheated oven for about 18–22 minutes, or until they are puffed up, golden brown, and fragrant.

Serving

  • Remove the twists from the oven and drizzle a little honey on top if desired.
  • Serve warm for the best flavor and texture.

Notes

Make sure the puff pastry is properly chilled for better puffing. Cheese alternatives like camembert or goat cheese can be used. Dried thyme can substitute fresh thyme (use a third of the amount).
