  • 2 cups fresh cranberries Use fresh for best flavor.
  • 1 cup sugar
  • 1/2 cup orange juice Can substitute with lemon juice.
  • 1/4 cup butter, melted
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Zest of 1 orange orange zest Adds flavor.
  • 1 cup optional nuts or fruits Can use nuts like walnuts or fruits like banana.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix together the sugar, orange juice, melted butter, and egg until well blended.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and orange zest.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  • Fold in the fresh cranberries and any optional ingredients such as nuts or fruits.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Serve warm with butter or cream cheese, or toast for breakfast with yogurt and fruit. Keeps well at room temperature for 2-3 days and can be frozen for up to 3 months.
