Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (250g)
  • 1 cup sugar (200g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Wet Ingredients

  • 1 cup fresh cranberries (about 100g)
  • 1/2 cup orange juice (120ml)
  • 1/2 cup vegetable oil (120ml)
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with some vegetable oil or non-stick spray.
  • In a large bowl, combine the flour, sugar, baking soda, salt, and cinnamon. Mix well.
  • In another bowl, whisk together the orange juice, vegetable oil, eggs, and vanilla extract until well blended.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fold in the fresh cranberries with a spatula.
  • Pour the batter into the prepared loaf pan, spreading it evenly.

Baking

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For added crunch, consider folding in chopped walnuts or pecans. This bread can be made in advance and stored tightly wrapped at room temperature or in the refrigerator.
