Ingredients

Egg Mixture

  • 6 large large eggs
  • 1 cup dry ricotta cheese Provides creaminess without excess moisture.
  • 0.5 cup grated cheese Cheddar, mozzarella, or cheese of choice.
  • 0.5 cup diced vegetables Bell peppers, spinach, onions, mushrooms, or a mix.

Instructions

Preparation

  • Preheat your oven to 180°C (350°F).
  • Crack the eggs into a large bowl and whisk until the yolks and whites are fully combined and slightly frothy.
  • Add the dry ricotta to the eggs and stir well to incorporate evenly.
  • Gently fold in the grated cheese and diced vegetables, ensuring they are evenly distributed without overmixing.
  • Lightly grease a muffin tin or a small baking dish to prevent sticking.
  • Spoon the mixture into the muffin cups or dish, filling each compartment nearly to the top but leaving a bit of room for expansion.

Baking

  • Bake in the oven for 25–30 minutes, or until the egg bites have puffed up, turned golden on top, and are set in the center.
  • Remove from the oven and let the bites cool for 5 minutes before carefully removing them from the molds.
  • Serve warm for the best texture and flavor.

Notes

Avoid overfilling the muffin cups to prevent spilling. Use a toothpick or knife to check doneness; it should come out clean when inserted.
