Ingredients

Main Ingredients

  • 1 cup unsalted butter, softened Use unsalted butter for better control of saltiness.
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt Use less if using salted butter.
  • 1 cup coconut milk Use light coconut milk for a lighter option.
  • 2 zests of limes Fresh lime zest is key for flavor.
  • 1 cup shredded coconut

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray.
  • In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-5 minutes.
  • Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually incorporate the dry mixture into the wet mixture, alternating with the coconut milk. Start and end with the flour mixture.
  • Gently fold in the lime zest and shredded coconut until evenly distributed.
  • Pour the batter into the greased loaf pan, smoothing the top with a spatula.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Drizzle with a simple glaze made from powdered sugar and lime juice, if desired, before serving.

Notes

Ensure your butter is at room temperature for easy creaming with sugar. Don’t overmix the batter after adding flour.
