Ingredients

For the Topping

  • 60 grams 60 grams (approx. ¼ cup) of melted unsalted butter
  • 100 grams 100 grams (roughly ½ cup) of firmly packed brown sugar
  • 7-9 pieces 7 to 9 maraschino cherries (drained)
  • 7-9 pieces 7 to 9 canned pineapple rings (juice-packed, not in syrup, gently dried)

For the Cake

  • 190 grams 190 grams (about 1½ cups) of plain all-purpose flour
  • 115 grams 115 grams (roughly ½ cup) of softened unsalted butter
  • 2 teaspoons 2 teaspoons of baking powder
  • 150 grams 150 grams (about ¾ cup) of white granulated sugar
  • 2 large 2 large eggs
  • ¼ teaspoon ¼ teaspoon of fine salt
  • 120 milliliters 120 milliliters (approx. ½ cup) of whole milk or buttermilk
  • 1 teaspoon 1 teaspoon of pure vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
  • Pour the melted butter into the prepared pan and sprinkle with brown sugar.
  • Arrange the pineapple rings over the brown sugar and place a maraschino cherry in the center of each ring.

Mixing Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream the softened butter and granulated sugar until pale and fluffy.
  • Add eggs one at a time, beating well after each addition, then mix in the vanilla.
  • Alternately add the dry ingredients and milk to the creamed mixture, starting and ending with the dry ingredients.

Baking

  • Spoon the batter over the arranged fruit, spreading evenly without disturbing the fruit layer.
  • Bake for 40 to 50 minutes until a toothpick inserted comes out clean.
  • Allow to rest in the pan for about 10 minutes before inverting onto a serving platter.
  • Serve warm or at room temperature, optionally with whipped cream or ice cream.

Notes

For better flavor, use juice-packed pineapple rings. Store leftovers in an airtight container in the refrigerator for up to 3 days.
