  • 80 ml melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 150 grams sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 125 grams all-purpose flour Can substitute with gluten-free flour
  • 2 teaspoons ground cinnamon
  • 50 grams brown sugar Can substitute with white sugar + molasses

Instructions

Preparation

  • Preheat your oven to 175°C (350°F) and grease a loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until they are smooth.
  • Stir in the melted butter until well combined.
  • Mix in the baking soda and salt, ensuring everything is evenly incorporated.
  • Add the sugar, beaten egg, and vanilla extract, and mix well.
  • Gradually add the flour, stirring until just combined. Avoid overmixing, as this can toughen the bread.

Cinnamon Swirl Preparation

  • In a small bowl, mix together the cinnamon and brown sugar.
  • Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon mixture over the batter.
  • Then, pour the remaining batter into the pan and top it with the remaining cinnamon mix.
  • Use a knife to swirl the mixture gently for that beautiful cinnamon effect.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Once it’s cool, slice and enjoy!

Notes

For best flavor, use overripe bananas. If you have leftovers, store in an airtight container at room temperature for up to 3 days, or in the fridge for a week. Can be frozen for up to 3 months.
