Preparation

  • Preheat your oven to 180°C (350°F).
  • Grease a cake pan lightly with butter or line with baking parchment.
  • In a mixing bowl, toss the diced apples with ground cinnamon and brown sugar.
  • In another bowl, beat together the softened butter and brown sugar until light and fluffy.
  • Add the eggs to the butter and sugar mixture, one at a time, mixing thoroughly.
  • Gradually fold in the plain flour until just combined.
  • Fold in the spiced apple mixture gently into the cake batter.
  • Pour the batter into the prepared cake pan and bake for 30-35 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a pretty finish, dust the top with icing sugar before serving. This cake is perfect warm or at room temperature and pairs wonderfully with cream or ice cream. Leftovers can be stored in an airtight container for up to three days.
