Ingredients

For the Oatmeal

  • 1 tsp olive oil
  • 1 small apple (diced)
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1 cup almond milk
  • 1 tbsp almond butter
  • 1 tbsp maple syrup

Preparation

  • In a medium-sized pot, heat the olive oil over medium heat until it's hot.
  • Add the diced apples, cinnamon, and vanilla extract to the pot. Sauté for about 3 minutes until the apples start to soften.
  • Remove a few apple pieces from the pot and set them aside for topping the oatmeal later.
  • Pour in the rolled oats and almond milk. Stir well and bring this mixture to a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, stirring occasionally until the oats are cooked and the liquid is absorbed.

Serving

  • Dish out your oatmeal into bowls. Top generously with the reserved apples, a scoop of almond butter, and a drizzle of maple syrup.

Notes

For serving, use vibrant bowls to make the dish visually appealing with the colorful toppings. You can also add nuts, berries, or extra cinnamon as desired. Store any leftovers in the fridge for up to three days, adding almond milk when reheating.
