Ingredients

For the Cookie Dough

  • 1/2 cup butter, softened Use unsalted butter for best flavor.
  • 1/2 cup cream cheese, softened Low-fat cream cheese can be used.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour Sifted for better mixing.
  • 1 tsp baking powder

For the Filling

  • 1/2 cup raspberry jam Other fruit jams can be substituted.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, cream cheese, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour and baking powder.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Roll small amounts of dough into balls and place them on the lined baking sheet, leaving space between each one.
  • Using your thumb or the back of a spoon, create a well in the center of each dough ball.
  • Spoon a small amount of raspberry jam into each well without overfilling.

Baking

  • Bake in the preheated oven for 10 to 12 minutes or until the edges are barely golden.
  • Let them cool completely on a wire rack before dusting with powdered sugar.

Notes

For easier shaping, chill the dough for 30 minutes if sticky. For added texture, mix in chopped nuts or coconut flakes.
