Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and grease two 6 to 8 ounce ramekins, dusting them with cocoa powder.
  • Melt the chocolate and butter together until smooth using a microwave or a double boiler.
  • Whisk together the sugar, whole egg, extra yolk, vanilla, and a pinch of salt in a bowl until foamy.
  • Pour the warm chocolate mixture into the egg mixture, whisk until combined, then fold in the flour until just mixed.
  • Divide the batter between the prepared ramekins. If time permits, chill for 5 minutes.

Baking

  • Bake in the preheated oven for 9 to 11 minutes until the edges are set and the center is slightly jiggly.
  • Allow the cakes to rest for 1 minute, then run a thin knife around the edges and invert onto plates.
  • Serve immediately, dusted with powdered sugar if desired.
