Ingredients

Base Ingredients

  • 250 g Plain chocolate biscuits Approximately 9 oz
  • 125 g Butter, melted Approximately 4.4 oz

Coconut Filling

  • 4 cups Desiccated coconut Approximately 320g
  • 395 g NESTLÉ Sweetened Condensed Milk Approximately 14 oz
  • 200 g Coles glace cherries, quartered About 3.5 oz each, use two packets
  • 125 g Copha, melted Approximately 4.4 oz
  • several drops Rose pink food colouring

Chocolate Topping

  • 1.5 cups NESTLÉ BAKERS' CHOICE Dark Choc Melts, melted Approximately 8 oz

Instructions

Preparation

  • Grease an 18cm x 28cm slice pan and line with baking paper, extending above the edges.
  • Crush the chocolate biscuits in a food processor until fine.
  • Mix in the melted butter until combined.
  • Press the biscuit mixture firmly into the base of the prepared pan and refrigerate for 30 minutes.

Coconut Filling

  • In a large bowl, combine the desiccated coconut, sweetened condensed milk, quartered glace cherries, and melted copha.
  • Add a few drops of rose pink food coloring and mix well.
  • Spread the coconut mixture over the chilled biscuit base and press down evenly.
  • Return to the refrigerator for 15 minutes.

Finishing Touch

  • Spread the melted dark chocolate over the top of the coconut layer.
  • Allow to set in the fridge for 1 hour.
  • Once set, remove from the pan, cut into squares, and serve.

Notes

For serving, present on a stylish platter, garnished with extra cherries or coconut. Pairs well with coffee or cold milk. For parties, use toothpicks for easy serving.
