  • 3 tablespoons chia seeds
  • 1 cup milk of choice, unsweetened is best
  • 1.5 tablespoons cocoa powder or cacao powder
  • 1 to 2 tablespoons maple syrup or honey, to taste
  • 1 teaspoon vanilla extract

  • 1 tablespoon Greek yogurt (optional for extra creaminess) Optional

Instructions

Preparation

  • Whisk cocoa, sweetener, vanilla, salt, and milk in a bowl or jar until smooth. Make sure the cocoa fully dissolves.
  • Stir in the chia seeds. Whisk well for 15 to 20 seconds so they don’t clump.
  • Let it sit for 10 minutes, then whisk again. This second whisk is key for an even texture.
  • Cover and refrigerate at least 2 hours, or overnight for the best set.
  • Before serving, stir and taste. Add a splash of milk if it’s too thick or more sweetener if you like it sweeter.

Notes

This pudding keeps well for 4 to 5 days in the fridge, ideal for meal prep. Portion into small jars for convenience. Add fresh fruit right before eating to maintain freshness.
