Ingredients

For the Cake

  • 1 jar (10 oz) maraschino cherries, drained
  • 1/4 cup liquid reserved from cherries
  • 1 box Betty Crocker Super Moist Devil's Food Cake Mix
  • 1 cup cherry cola carbonated beverage
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Frosting

  • 1 tub (12 oz) Betty Crocker Whipped Vanilla Frosting
  • 1 cup marshmallow creme
  • 24 maraschino cherries with stems, well-drained (for topping) optional

Instructions

Preparation

  • Preheat your oven to 350 degrees F (or 325 degrees F for a dark or nonstick pan). Spray the bottom only of a 13×9-inch pan with baking spray that includes flour. Chop your drained cherries and set them aside.

Mixing Batter

  • In a large mixing bowl, combine the cake mix, cherry cola, vegetable oil, eggs, and the 1/4 cup of reserved cherry liquid.
  • Using an electric mixer, beat the mixture on low speed for 30 seconds, then increase to medium speed and blend for about 2 minutes, occasionally scraping down the sides of the bowl.
  • Gently stir in the chopped cherries.

Baking

  • Pour the cake batter into the prepared pan.
  • Bake in the oven for 34 to 42 minutes, or until a toothpick inserted in the center comes out clean.
  • Once done, cool the cake completely for about 1 hour.

Frosting

  • In a separate small bowl, mix the whipped frosting with the marshmallow creme until the mixture is smooth and well combined.
  • Once the cake is cool, spread the frosting mixture evenly over the top.
  • For a festive touch, place 2 cherries with stems on each slice before serving.

Notes

Best served chilled or at room temperature. Consider drizzling a bit of chocolate sauce over the slices or serving with a scoop of vanilla ice cream for added flair!
