Ingredients

  • 3 tablespoons Chia seeds Use fresh whole chia seeds, black or white.
  • 1 cup Milk (almond, oat, coconut, or dairy) Any milk works, but whole milk sets the fastest.
  • 1-2 teaspoons Maple syrup (or sweetener of choice) Adjust sweetness after chilling.

Instructions

Preparation

  • Whisk the milk and sweetener in a jar or bowl until smooth.
  • Add the chia seeds and whisk for 20 to 30 seconds to avoid dry clumps.
  • Wait 10 minutes and whisk again to break any clumps that may have formed.
  • Cover and chill the mixture in the refrigerator for at least 2 hours, preferably overnight.
  • Taste the pudding the next morning and adjust sweetness with more maple syrup or a pinch of salt if desired.

Notes

For thicker pudding, use 3.5 tablespoons of chia seeds per cup of milk. If too thin, stir in 1 to 2 teaspoons more chia, then wait 15 minutes before checking again. Portion into small jars for meal prep.
