Ingredients

For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.25 cups 1/4 cup ground pistachios
  • 3 tablespoons 3 tablespoons sugar
  • 5 tablespoons 5 tablespoons melted butter

For the filling

  • 16 oz 16 oz cream cheese, softened Ensure cream cheese is at room temperature.
  • 0.5 cups 1/2 cup sugar
  • 2 large 2 large eggs
  • 0.5 cups 1/2 cup sour cream
  • 0.25 cups 1/4 cup pistachio pudding mix (dry powder)
  • 1 teaspoon 1 teaspoon vanilla extract

For the topping

  • 1 can 1 can cherry pie filling (21 oz)
  • optional extra chopped pistachios for garnish

Instructions

Preparation

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
  • In a mixing bowl, combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Mix until well combined and press into the prepared pan. Bake for about 8 minutes and let cool.
  • In another bowl, beat the softened cream cheese and sugar together until smooth. Gradually add in eggs, mixing one at a time. Next, mix in sour cream, pistachio pudding mix, and vanilla extract until well blended.

Baking

  • Pour the cheesecake filling over the cooled crust and bake for approximately 45-50 minutes until the center is just set but slightly wobbly.

Cooling and Serving

  • Turn off the oven and crack the door open, allowing the cheesecake to cool inside for an hour to prevent cracking. After cooling, refrigerate for at least 4 hours or overnight.
  • Spread the cherry pie filling over the top of the cheesecake and garnish with extra chopped pistachios if desired.
  • Carefully remove from the springform pan, slice, and serve. Optionally serve with whipped cream.

Notes

For best results, use room temperature cream cheese to avoid lumps. Avoid overbaking; the cheesecake will firm up while cooling. Try different fruit toppings like blueberries or strawberries for variation.
