Ingredients

Meat Mixture

  • 1 pound ground beef Can substitute with ground turkey
  • ½ cup breadcrumbs For binding
  • ¼ cup milk
  • 1 large egg For binding
  • 1 small onion, finely chopped Adds flavor
  • 2 cloves garlic, minced Adds flavor
  • 1 teaspoon salt Adjust to taste
  • ½ teaspoon black pepper Adjust to taste
  • 1 teaspoon Worcestershire sauce For added depth of flavor

Topping

  • ½ cup ketchup
  • 1 tablespoon mustard

Cheese and Garnish

  • ½ cup grated cheddar cheese Feel free to substitute with other cheeses
  • ¼ cup fresh parsley, chopped Plus additional for garnish

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, pepper, and Worcestershire sauce. Mix until well combined.
  • Take a small portion of the meat mixture (about the size of a golf ball) and flatten it in your hand. Place a small amount of cheddar cheese in the center, then mold the meat around the cheese to form a ball. Place each meatball onto the prepared baking sheet.

Cooking

  • In a small bowl, mix together ketchup and mustard. Brush this mixture over the top of each meatloaf bite.
  • Place the baking sheet in the oven and bake for 25-30 minutes, or until the meatloaf bites are cooked through and the tops are caramelized.
  • Before serving, garnish with additional chopped parsley.

Notes

You can prepare the meat mixture in advance and keep them in the fridge or freezer until ready to cook. Optionally, add chopped jalapeños or chili powder to spice it up.
