Ingredients

Meat Mixture

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

Topping

  • ½ cup ketchup
  • 1 tablespoon mustard

Cheesy Filling

  • ½ cup grated cheddar cheese
  • ¼ cup fresh parsley, chopped plus additional for garnish

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, black pepper, and Worcestershire sauce. Mix until well combined.
  • Take a small portion of the meat mixture (about 2 tablespoons), flatten it in your hand, and place a small amount of grated cheddar cheese in the center. Mold the meat around the cheese to form a ball and place it on the prepared baking sheet.
  • Repeat the process with the remaining meat and cheese until everything is used.

Topping

  • In a small bowl, mix together the ketchup and mustard. Brush this mixture over the top of each meatloaf bite.

Cooking

  • Put the baking sheet in the preheated oven and bake for 25-30 minutes, or until the meatloaf bites are cooked through and the tops are nicely caramelized.

Serving

  • Once done, remove the bites from the oven and garnish with additional chopped parsley before serving.

Notes

These bites can be served with a simple side salad, mashed potatoes, or dipping sauces like ranch or barbecue. They can be made ahead and stored in the refrigerator for up to 24 hours before baking. They also freeze well for later use.
