Ingredients

Main Ingredients

  • 1 cup shredded cheese Feel free to use cheddar, pepper jack, or mozzarella.
  • 1/4 cup maple syrup Add more if desired for serving.
  • 1 1/2 cups water
  • 2 cups dry pancake mix
  • 1 pound ground breakfast sausage Can substitute with plant-based or turkey sausage.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, cook the ground sausage over medium heat. Stir until crumbled and fully cooked, about 10 minutes.
  • Transfer the cooked sausage to a mixing bowl.
  • In another bowl, mix water and pancake mix until just combined; a few lumps are okay.
  • Gently fold in the cooked sausage, shredded cheese, and maple syrup until combined.
  • Scoop about a tablespoon of the batter into each greased mini muffin spot, filling each about 3/4 full.

Baking

  • Bake in the preheated oven for 10 to 15 minutes, or until golden brown and puffed.
  • Remove from the oven, and let cool slightly before serving.

Notes

Serve warm with extra maple syrup on the side. You can prepare the mixture ahead of time and store it in the fridge. These can also be frozen after baking.
