  • 2 pieces boneless, skinless chicken breasts (about 500g)
  • 1 pieces red bell pepper, sliced
  • 1 pieces green bell pepper, sliced
  • 1 pieces yellow bell pepper, sliced
  • 1 pieces onion, sliced
  • 1 tablespoon olive oil (15ml)
  • 1 packet fajita seasoning mix (about 30g)
  • 1 cup shredded cheddar cheese (100g)
  • 1 cup shredded mozzarella cheese (100g)
  • 1/2 cup sour cream (125g)
  • 1/4 cup chopped fresh cilantro (15g)

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray.
  • Slice the chicken breasts into thin strips and season them with salt, pepper, and half of the fajita seasoning mix.
  • Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and sauté until cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add the sliced bell peppers and onion. Sprinkle the remaining fajita seasoning mix over them and sauté until they are tender-crisp, about 3-4 minutes.

Assembly

  • In a large bowl, combine the cooked chicken, sautéed vegetables, sour cream, and half of the shredded cheeses. Mix well to combine everything.
  • Transfer the mixture to the greased baking dish and top with the remaining cheeses.

Baking

  • Bake for 20 to 25 minutes or until the cheese is melted and bubbly.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to keep the cheese nice and melty. Feel free to mix in other veggies like zucchini or corn for extra taste. This casserole is great for meal prep! Make a batch at the start of the week, and you'll have ready-made dinners for busy nights.
