Ingredients

Main Ingredients

  • 1 cup shredded carrots Freshly shredded carrots provide moisture and natural sweetness.
  • 1 cup brown sugar Adds depth of flavor and moisture.
  • 1/2 cup granulated sugar Combined with brown sugar for sweetness.
  • 1/2 cup unsalted butter, softened For best results, allow butter to soften at room temperature.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or raisins (optional) For added texture.
  • Cream cheese frosting or glaze (for topping) Enhances the indulgence of the cookies.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and shredded carrots until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined; be careful not to overmix.
  • If using, fold in the chopped walnuts or raisins for added texture.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 12 to 15 minutes, or until lightly golden around the edges.
  • Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
  • Once cooled, drizzle with cream cheese frosting or glaze, if desired.

Notes

For extra flavor, consider toasting the walnuts before adding them to the dough. Don’t skip the cooling step; this will help the cookies set properly and enhance their chewy texture.
