  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1 tbsp pure maple syrup or honey Use maple syrup for a vegan option.
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/3 cup toasted walnuts, chopped
  • 2 tbsp honey
  • 1 tsp apple cider vinegar
  • 8-10 pieces wooden skewers Optional: fresh thyme for garnish.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the halved Brussels sprouts with olive oil, maple syrup (or honey), sea salt, and black pepper until well coated.

Cooking

  • Place the sprouts cut-side down on the prepared baking sheet and roast for 25–30 minutes, flipping them halfway through until they are golden and crispy.
  • While the sprouts are roasting, heat a dry skillet over medium heat, add chopped walnuts, and toast for 2–3 minutes until fragrant.
  • In a small saucepan, warm honey and apple cider vinegar over low heat until bubbling; stir in toasted walnuts and remove from heat.

Assembly

  • Once the Brussels sprouts are done, thread 4–5 roasted sprouts onto each wooden skewer.
  • Drizzle the warm walnut honey glaze over the skewers and sprinkle with fresh thyme, if using.

Notes

Serve warm on a festive platter, and pair with dipping sauces like balsamic reduction or yogurt dip. Leftovers can be stored in an airtight container for up to 2 days.
