  • 4 pieces chicken cutlets (approximately 1 pound or 450 g)
  • 1 tablespoon olive oil 15 ml
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved 150 g
  • 1/2 cup marinara or tomato sauce 120 ml
  • 4 slices fresh mozzarella 8 ounces or 225 g
  • 2 tablespoons balsamic glaze 30 ml
  • 1/4 cup fresh basil leaves, torn 15 g
  • Salt and pepper to taste

Preparation

  • Season the chicken cutlets generously with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken cutlets and sear for 4 to 5 minutes on one side until golden brown; then flip and cook for another 4 to 5 minutes until nearly cooked through.
  • Sprinkle the minced garlic over the chicken. Add the halved cherry tomatoes and pour the marinara sauce around the chicken in the skillet.
  • Place a slice of mozzarella over each chicken cutlet, cover the skillet with a lid, and cook for an additional 3 minutes until the cheese is melted and bubbly.
  • Remove the skillet from heat, drizzle with balsamic glaze, and sprinkle with fresh basil leaves. Serve warm and enjoy!

Notes

Using fresh basil is key here as it provides the signature aroma. If fresh mozzarella isn't available, regular shredded mozzarella can work, but won’t have the same melty texture. Optionally, consider marinating the chicken in olive oil, garlic, and herbs for 30 minutes before cooking for extra flavor.
