Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar (plus more for coating)
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 1 cup finely chopped pecans

Preparation

  • In a large bowl, beat the softened butter and powdered sugar together until smooth and creamy, about 2 minutes.
  • Add the vanilla extract and mix until fully combined.
  • Stir in the flour and salt until just combined.
  • Gently fold in the finely chopped pecans. If the dough feels too soft to handle, chill for 20 to 30 minutes.

Shaping and Baking

  • Roll the dough into 1-inch balls and place them about 2 inches apart on a parchment-lined baking sheet.
  • Bake in a preheated oven at 350°F (175°C) for 13 to 15 minutes, or until the bottoms are lightly golden.
  • Let the cookies cool on the pan for about 5 minutes.

Coating

  • While the cookies are still warm, roll each one in powdered sugar to coat.
  • Allow them to cool completely, then roll them in powdered sugar once more for a snowy finish.

Notes

Chill the dough longer if needed to prevent cookies from flattening. You can also add a pinch of cinnamon or swap pecans for walnuts or almonds for variations.
