Ingredients

Main Ingredients

  • 1 cup butter, melted Use unsalted butter for best results.
  • 2 cups all-purpose flour (or gluten-free flour) For a gluten-free version, make sure to use gluten-free flour.
  • 2 cups sugar
  • 3 pieces eggs Large eggs are recommended.
  • 2 teaspoons almond extract
  • 3 cups fresh cranberries (or frozen cranberries) Frozen cranberries can be used without thawing.

Optional Toppings

  • 3/4 cup sliced almonds Optional for added crunch.
  • 1/2 cup flaked coconut Optional for added flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, use an electric mixer to combine the melted butter, sugar, and flour until smooth.
  • Add the eggs and almond extract, mixing well until everything blends nicely.
  • Gently fold in the cranberries.

Baking

  • Grease a 13x9-inch baking pan, and spread the batter evenly in the pan.
  • If desired, sprinkle the top with sliced almonds and/or flaked coconut.
  • Bake in your preheated oven for about 1 hour, or until golden brown.
  • Allow to cool, then cut into squares.

Notes

Store the bars in an airtight container. They can be made ahead of time and enjoyed over several days.
