  • 225 g butter (softened) Make sure butter is at room temperature.
  • 400 g brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 220 g all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 270 g old fashioned oats Can substitute with quick oats for a different texture.

Instructions

Preparation

  • Preheat your oven to 350 degrees F (180 degrees C) and line two large baking trays with parchment paper.
  • In a medium-sized bowl, combine the flour, baking soda, and salt. Whisk everything together to combine and set it aside.
  • In a large mixing bowl, cream together the softened butter and brown sugar on high speed for about 3-4 minutes until it becomes light and fluffy.
  • Add the vanilla extract to the butter-sugar mixture and mix well.
  • Beat in the eggs, one at a time, making sure to mix well after each addition.
  • Gradually add the flour mixture to the wet ingredients, stirring until just combined, which should take about one minute.
  • Fold in the old fashioned oats until fully incorporated.

Baking

  • Drop the cookie dough by mounds onto your prepared cookie sheet, keeping them about 3 inches apart.
  • Bake in the preheated oven for 11-13 minutes, until the edges are golden and the centers are still soft.
  • Remove from the oven and let the cookies cool on a wire rack. Repeat the process for the remaining cookie dough.

Notes

For chewy cookies, slightly underbake them. You can add raisins, chocolate chips, or nuts for variety. Store in an airtight container at room temperature for up to a week.
