  • 320 g Ready-rolled puff pastry sheet
  • 100 g Cranberry sauce
  • 150 g Brie, cut into 12 pieces
  • 1 unit Egg, beaten
  • Olive oil, for greasing
  • Sea salt
  • Runny honey

Instructions

Preparation

  • Preheat your oven to 200°C (400°F, fan), 220°C (425°F), or Gas Mark 7.
  • Brush the inside of the 12 holes of your muffin tin with a light coating of olive oil.
  • Unroll the puff pastry sheet on a clean surface and cut it into 12 equal squares.
  • Gently press each pastry square into the muffin holes, ensuring there's a bit of an edge that slightly rises above the tin.
  • Spoon a small amount of cranberry sauce into each pastry square, then place a piece of Brie on top.
  • Use a pastry brush to coat the exposed pastry with the beaten egg.
  • Bake for about 20-25 minutes, or until the pastry is crispy and golden brown.
  • Remove from the oven, sprinkle with sea salt, and drizzle a little runny honey over the top before serving.

Notes

Brie and cranberry bites are best served warm. For a festive pairing, try them with sparkling apple cider or a side of fresh arugula.
