Ingredients

For the pastry

  • 2 sheets sheets of puff pastry (square-shaped)
  • 1 tablespoon milk For brushing the pastry

Cheese and nuts filling

  • 100 grams blue cheese, crumbled About 3.5 ounces
  • 100 grams grated Parmesan cheese About 3.5 ounces
  • 50 grams walnuts, chopped About 1.75 ounces

Seasoning

  • 2 tablespoons honey For sweetness
  • 6-8 sprigs fresh thyme leaves Plus extra for garnish
  • 1 pinch sea salt
  • 1 pinch cracked pepper

Instructions

Preparation and Baking

  • Preheat your oven to 180°C (350°F). If using an electric non-fan forced oven, increase to 200°C (390°F).
  • Drizzle 1 tablespoon of honey over each sheet of puff pastry and spread evenly.
  • Divide walnuts, blue cheese, and Parmesan cheese between the two sheets. Sprinkle fresh thyme leaves, and season with sea salt and cracked pepper.
  • Roll up each sheet of pastry tightly to form a log shape. Cut each log in half lengthwise, tucking any spillage back around the filling.
  • On baking paper, twist each piece of pastry and form into a round coil shape.
  • Brush the coils with milk to ensure a golden color when baked.
  • Bake for 25-30 minutes until puffed up, golden, and fully cooked.
  • Remove from oven, scatter extra thyme leaves on top, and serve warm.

Notes

Serve these twirls as an appetizer or snack. Pair with a dipping sauce or fresh salad. You can make these ahead of time and freeze them before baking.
