Ingredients

Beef and Mushroom Filling

  • 1 pound beef tenderloin or filet mignon, cut into small cubes (450 grams)
  • 1 tablespoon olive oil (15 ml)
  • 1 cup mushrooms, finely chopped (such as cremini or button) (about 100 grams)
  • 2 tablespoons shallots, finely chopped (30 grams)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

Pastry Components

  • 1 package puff pastry, thawed (about 1 pound or 450 grams)
  • 1 egg beaten, for egg wash
  • 1 tablespoon Dijon mustard (optional)

Instructions

Preparation

  • In a skillet over medium-high heat, add the olive oil. Season the beef with salt and pepper, then sear it for 2-3 minutes on each side until browned. Remove the beef from the heat and let it cool.
  • In the same skillet, add the chopped mushrooms, shallots, and garlic. Cook until the mushrooms become golden brown, about 5-7 minutes. Add the thyme, season with salt and pepper, and let this mixture cool down as well.
  • On a lightly floured surface, roll out the puff pastry sheets until they are about 1/8 inch thick. Cut the pastry into 3x3 inch squares.

Assembly and Baking

  • On each pastry square, place a spoonful of the mushroom mixture, then add a piece of the seared beef on top. Fold the pastry over the filling, sealing the edges with a fork.
  • Preheat your oven to 400°F (200°C). Arrange the bites on a baking sheet. Brush the tops with the beaten egg and bake for 15-20 minutes or until the pastries are golden brown.
  • Let the bites cool slightly before serving. For an extra zing, consider brushing the inside of the pastry squares with Dijon mustard before adding the mushroom and beef filling.
