Ingredients

  • 900 g beef chuck, cut into 2.5cm cubes
  • 1 litre beef broth
  • 2 tablespoons vegetable oil
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce

Instructions

Preparation

  • In a large pot, heat the vegetable oil over medium heat.
  • Add the beef cubes and brown them on all sides. Once browned, remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, until softened and fragrant.

Cooking

  • Return the browned beef to the pot, then add the beef broth, sliced carrots, diced potatoes, salt, pepper, dried thyme, bay leaf, and Worcestershire sauce.
  • Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2 hours or until the beef is tender and the flavors have melded together beautifully.
  • Before serving, remove the bay leaf.

Notes

Serve hot with crusty bread and fresh parsley. Consider pairing with a garden salad or buttery mashed potatoes for an elevated meal. For added flavor, brown the beef well, and feel free to add other vegetables like peas or green beans. For a spicy kick, add red pepper flakes.
