Ingredients

For Sweet Potato Fans

  • 3 large sweet potatoes (about 2 pounds / 900 g) Should be firm and unblemished for best texture.
  • 2 tablespoons olive oil Best for flavor and crispiness.
  • 1 teaspoon salt Adjust to taste.
  • to taste teaspoon Black pepper
  • 1 teaspoon sweet paprika powder
  • 1 teaspoon garlic powder

For Honey and Chili Style Glaze

  • 3 tablespoons maple syrup Adjust to taste for sweetness.
  • 1 teaspoon chili sauce Adjust to heat preference.
  • 1 tablespoon soy sauce Choose gluten-free if needed.
  • 1 teaspoon lemon juice
  • 1 teaspoon vegetable oil

For Nut Chips

  • 1 handful mixed nuts (such as almonds, cashews, or walnuts) Use unsalted to control saltiness.

Instructions

Preparation

  • Preheat oven to 200°C (392°F).
  • Thoroughly wash the sweet potatoes and pat dry.
  • On a cutting board, place one sweet potato and slice thinly into ‘fans’: cut lengthwise into thin slices but leave about 1/4 inch (0.6 cm) at the base uncut so the slices hold together. Repeat with all sweet potatoes.
  • Arrange the sweet potato fans on a baking sheet lined with parchment paper or lightly greased.
  • Brush the fans generously with olive oil, making sure oil gets between the slices.
  • Season evenly with salt, black pepper, paprika, and garlic powder.

Baking

  • Bake for about 40 minutes until the fans open up and the edges crisp and brown. Check at around 35 minutes to prevent burning; they should be tender inside and crispy on edges.

Glaze Preparation

  • While sweet potatoes bake, make the glaze: heat maple syrup, chili sauce, soy sauce, lemon juice, and vegetable oil in a small pan over medium heat. Stir and let it caramelize slightly until golden and thickened (about 3-5 minutes). Remove from heat.

Nut Chips Preparation

  • Toast nuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and slightly golden. Remove from heat.

Serving

  • When sweet potatoes are ready, drizzle the warm glaze evenly over them. Scatter toasted nut chips on top.
  • Serve immediately to enjoy the contrast of textures and flavors.

Notes

Keep an eye on the glaze while caramelizing; it can burn quickly once sugar is involved. For a nut-free option, consider toasted seeds instead for crunch.
