  • 2 pieces ripe avocados, halved and pitted (about 400 g) Choose ripe avocados that yield slightly to pressure for the best flavor and creaminess.
  • 2 to 4 slices your favorite bread, toasted (about 120–240 g) Any bread, including gluten-free or whole grain, can be used.
  • 1 cup cherry tomatoes, halved (150 g)
  • 1/2 cup feta cheese, crumbled (75 g) Crumbled goat cheese can be a substitute.
  • 1/4 cup dried cranberries, chopped (40 g) Feel free to swap with raisins or chopped dates.
  • 1/4 cup walnuts, chopped (30 g) Almonds or pecans can also be used.
  • Salt and pepper to taste
  • 1 to 2 teaspoons freshly squeezed lemon juice (5–10 ml)
  • Fresh herbs (optional), such as parsley or basil, for garnish

Instructions

Preparation

  • Toast the bread slices until they are golden brown and crisp (about 2-4 minutes).
  • In a mixing bowl, mash the avocados with a fork, adding lemon juice, salt, and pepper. Leave small chunks for added texture.
  • Halve the cherry tomatoes and chop the cranberries and walnuts. Set aside.
  • Crumble the feta cheese into a separate bowl.

Assembly

  • Spread an even layer of the smashed avocado onto each toast slice.
  • Top the avocado layer with halved cherry tomatoes, crumbled feta, chopped cranberries, and walnuts.
  • Optionally, garnish with fresh herbs.

Serving

  • Serve the toast immediately while it’s still warm and crispy.

Notes

For extra flavor, try grilling your bread instead of toasting. Keep toppings chopped small for easier handling. If making for a group, set up a 'build-your-own' toast station.
