Ingredients

For the Bread

  • 450 g French baguette Cut into bite-sized cubes and let sit out to stale.

For the Apple Filling

  • 800 g gala apples (4-6) Chopped.
  • 55 g butter Melted.
  • 150 g brown sugar For the filling.
  • 240 ml water
  • 10 g apple pie spice *

For the Custard

  • 5 large eggs
  • 60 g unsalted butter (melted)
  • 530 ml whole milk
  • 10 ml vanilla extract
  • 100 g brown sugar For the custard.
  • 5 g apple pie spice
  • 5 g ground cinnamon

Optional Toppings

  • ice cream For serving.

Instructions

Preparation

  • Cut the French baguette into bite-sized cubes and let sit out on a baking tray for a few hours or overnight to stale.

Make the Apple Filling

  • Melt 55 g of butter over medium heat in a large pan. Add the chopped gala apples, 150 g of brown sugar, 240 ml of water, and 10 g of apple pie spice.
  • Cook until the apples are tender and slightly caramelised, about 10-15 minutes. Remove from heat and let cool slightly.

Prepare the Custard

  • In a large bowl, whisk together the eggs, 60 g of melted unsalted butter, 530 ml of whole milk, 10 ml of vanilla extract, 100 g of brown sugar, 5 g of apple pie spice, and 5 g of ground cinnamon until well combined.

Combine Ingredients

  • In a large mixing bowl, add stale bread cubes and pour the apple pie filling over the top.
  • Pour the custard mixture over everything, gently folding it together until the bread is thoroughly soaked.

Bake

  • Preheat the oven to 180°C (160°C fan). Grease a baking dish with butter.
  • Transfer the mixture into the dish, spread it out evenly, and bake for 40-45 minutes or until the centre is set and the top is golden brown.

Cool & Serve

  • Allow the Apple Pie Bread Pudding to cool slightly before serving. It can be enjoyed warm or at room temperature.

Notes

Serve warm, with a scoop of vanilla ice cream or a drizzle of caramel sauce. Sprinkle cinnamon and icing sugar before serving for an impressive touch. Use older bread for best results, or lightly toast fresh bread to dry it out.
