Ingredients

For the double pie crust

  • 1 recipe 1 recipe for double pie crust Make according to your favorite method.

For the filling

  • 1 kg 1 kg Granny Smith apples, peeled and cored About 6-7 apples or 7 cups thinly sliced.
  • 1.5 tsp 1 ½ tsp ground cinnamon
  • 8 tbsp 8 tbsp unsalted butter
  • 3 tbsp 3 tbsp all-purpose flour
  • 60 ml 60 ml water
  • 200 g 200 g granulated sugar
  • 1 ea 1 egg + 1 tbsp water For egg wash.

Instructions

Preparation

  • Make your double pie crust recipe according to your favorite method and chill it as per the instructions.
  • Preheat the oven to 220°C (425°F).
  • In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for one minute while whisking constantly.
  • Gradually add 60 ml of water and 200 g of granulated sugar, stirring until the mixture comes to a boil.
  • Once boiling, reduce the heat and let it simmer for 3 minutes, whisking frequently. Remove from heat.
  • Peel, core, and slice the Granny Smith apples into thin slices. Mix them in a large bowl with 1 ½ tsp of cinnamon.
  • Pour the buttery sauce over the apple slices and stir gently to coat all the apples.
  • Sprinkle flour on your work surface and roll out the bottom pie crust into a 30 cm (12-inch) diameter circle.
  • Transfer the crust to a 23 cm (9-inch) pie plate.
  • Pour in the apple mixture, mounding it slightly in the center.
  • Roll out the second pie crust into a 28 cm (11-inch) round, cut into 10 equal strips, and arrange in a woven lattice pattern over the filling.
  • Whisk together 1 egg and 1 tbsp of water in a small bowl and brush the mixture over the lattice crust.
  • Bake the pie at 220°C (425°F) for the first 15 minutes, then reduce the temperature to 175°C (350°F) and bake for an additional 45 minutes, or until the apples are soft.
  • Let the pie cool at room temperature for at least 1 hour before serving.

Notes

For extra indulgence, serve with vanilla ice cream, whipped cream, or a drizzle of caramel sauce. You can mix sweeter apple varieties like Honeycrisp for a different flavor.
