Ingredients

Main Ingredients

  • 1 medium medium apple, grated (about 150 g) Use any variety of apple for different flavors; sweeter apples may require less additional sweetener.
  • 2 large large eggs Can be modified with aqua faba for a vegetarian version.
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • pinch salt
  • 1/2 teaspoon vanilla extract
  • optional Maple syrup or honey for serving

Instructions

Preparation

  • In a mixing bowl, grate the apple and combine it with the eggs. Whisk them together until well blended.
  • Add the cinnamon, baking powder, salt, and vanilla extract to the mixture. Stir until combined.

Cooking

  • Heat a non-stick skillet over medium heat and add a small amount of oil if necessary.
  • Pour a small ladle of the pancake batter onto the skillet. Cook until bubbles form on the surface, about 2 minutes.
  • Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  • Repeat with the remaining batter, adding more oil to the skillet as needed.

Serving

  • Serve warm with a drizzle of maple syrup or honey, if desired.

Notes

Let the batter sit for a minute before cooking to allow it to thicken slightly. Adjust the heat as needed; too high can brown the pancakes without cooking them through.
