Ingredients

Main Ingredients

  • 2 apples, grated Any sweet variety like Gala or Fuji works well.
  • 2 large eggs
  • 90 g oats Use rolled oats for a heartier texture.
  • 120 ml milk Any kind of milk (dairy or plant-based) can be used.
  • 1 teaspoon cinnamon
  • a little oil or butter for the frying pan

Instructions

Preparation

  • Place oats in a blender or food processor and blend until finely ground into oat flour.
  • Use a grater to coarsely shred the apples, discarding the core.
  • In a mixing bowl, whisk together the eggs, milk, blended oats, and cinnamon until well combined.
  • Fold in the grated apples to the batter gently. Allow it to soak for about 10 minutes.
  • Preheat a non-stick frying pan over medium heat. Add a small amount of oil or butter to coat the surface.

Cooking

  • Pour small amounts of batter onto the heated pan to form pancakes, cooking until bubbles form and the edges look set, about 2-3 minutes.
  • Flip and cook for another 2-3 minutes until golden brown on both sides.
  • Remove from the pan and serve warm with yogurt or applesauce.

Notes

For extra fluffiness, let the batter rest longer, up to 15 minutes. Flourless pancakes can be delicate; treat them gently when flipping.
