Ingredients

Dry Ingredients

  • 1 cup oats Rolled oats give structure and wholesome fiber; quick oats can be used but may alter texture.
  • 2 tablespoons natural yogurt Adds moisture and a mild tang, balancing sweetness nicely.
  • 2 medium apples, diced Firm and fresh to avoid excess moisture in the batter.
  • 100 ml water
  • 2 large eggs
  • 1 teaspoon vanilla extract or vanillin
  • 100 g cottage cheese Provides creaminess and protein without heaviness.
  • 60 g walnuts, roughly chopped Can be swapped for pecans or almonds if preferred.
  • 60 g dried cranberries

For Greasing and Serving

  • Butter or oil For greasing the baking dish.
  • Honey For drizzling.
  • Slivered almonds For sprinkling.

Instructions

Preparation

  • Preheat your oven to 180°C (350°F). Lightly grease an 8x8 inch (20x20 cm) baking dish with butter or oil.
  • In a large bowl, whisk together the oats, natural yogurt, water, eggs, and vanilla extract until evenly combined. The mixture will be thick but smooth.
  • Fold in the cottage cheese, diced apples, chopped walnuts, and dried cranberries. The batter should hold together but remain moist.

Baking

  • Pour the batter into the prepared baking dish and spread it out evenly with a spatula.
  • Bake in the preheated oven for about 40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  • Remove the cake and let it cool slightly. Drizzle honey over the warm top and sprinkle with slivered almonds before serving.

Notes

Make sure the apples are diced evenly to ensure uniform baking. Avoid excess mixing after adding cottage cheese to keep the texture light. Store leftovers covered in the refrigerator for up to 3 days. It also freezes well when wrapped tightly.
